3/4 lb. tilapia (St. Peter's fish) or other (non-oily)
white fish fillet
Olive oil spray
Salt and freshly ground black pepper
2 scallion stalks, sliced (1/4 cup)
1 lemon, cut into 4 wedges
Preheat broiler. Rinse fish and pat dry with a paper
towel. Line a baking tray with foil and spray with olive oil spray.
Place fish on tray and spray fish with olive oil spray. Sprinkle
with salt and pepper to taste. Place under broiler about 3 to 4
inches from the heat. Broil 5 minutes for a 3/4-inch fillet.
Broil an
additional minute for a 1-inch piece. Remove and sprinkle
scallions on top of fish. Broil 1 minute. Remove and squeeze
lemon juice from 2 lemon wedges on fish. Serve remaining 2
wedges on plate with fish. Makes 2 servings.
