2 pounds sweet potatoes
1/2 tsp grated orange zest
3/4 cup buttermilk. at room temperature
3 tablespoons butter, at room temperature
1 tablespoon brown sugar
salt and freshly ground black pepper to taste
Peel the sweet potatoes and cut into chunkc. Steam over boiling water until
tender..about 20 to 25 mins. Transfer sweet potatoes to a mixing
bowl and
mash with a masher or electric mixer, blending in orange zest, buttermilk,
butter and brown sugar. Add salt and pepper to taste. Transfer to
serving
dish.
**This dish can be made ahead of time..spoon into buttered casserole dish
and reheat at 375 degrees for about a half hour***
serves 8.
