Baked Mexican Rice

          3 cups cooked white rice
          2 roasted bell peppers, diced
          3 jalapenos, diced
          1 cup corn
          1 c sour cream
          1 cup shredded monterrey jack cheese
          2 Tbsp chopped fresh cilantro
          2 Tbsp parsley
          1/3 cup chopped green onions

          Preheat the oven to 350 degrees.  Combine all ingredients, reserving 1/4
          cup of cheese.  Put mixture into casserole dish, bake uncovered for 30 minutes.
          Remove and sprinkle with reserved cheese, return to oven for 5 more minutes
          until cheese melts.
