1/4 c. Margerine
(or olive oil)
4 Tbsp. White
Flour
4 Tbsp. Sugar
(brown)
2 c. Pineapple
Juice
4 ea. Yams
Yams: Boil yams
in pot, with 1 inch of water in the bottom of the pot, until yams
are soft. Peel
and slice yams. Put into a casserole dish.
Gravy: Cook margerine
and flour in fry pan until slightly brown. Remove from
heat and add
pineapple juice and sugar. Stir out the lumps and return to heat. Once
gravy is
thick, pour
on top of the yams. Bake uncovered at 350 degrees for 40-45 minutes.
Note: You may
need to double or triple the gravy recipe depending on how many
yams you have.
