2 Tbsp. Olive
Oil
1 1/2 c. Onions
(chopped)
1 ea. Bell Peppers
(green, chopped)
4 c. Broccoli
(chopped)
1 c. Broccoli
(thinly sliced flowerets)
1 tsp. Salt
2 1/2 c. Water
2 c. Milk (tofu
or rice milk)
1 ea. Bay Leaf
1 tsp. Liquid
Aminos (or soy sauce)
1/4 tsp. Thyme
1/4 tsp. Basil
Saute onions
in oil with bay leaf until onions are clear. Add chopped pepper,
broccoli, water,
and salt. Cook 10 minutes until tender. Puree sauteed mixture
little by little
with milk in blender. Make sure it is as smooth as possible. Put into
a pot. Add seasonings.
Steam broccoli flowerets until tender and then add them
to the pot.
