1 pound stew
meat
2 Tbsp. oil
3 oz tomato
paste
10 1/2
oz beef broth
1/2 tsp black
pepper
2 cloves garlic,
crushed
4 Tbsp chili
powder
1/2 tsp cumin
3 serrano peppers,
chopped
3/4 cup water
1 tsp cornstarch
Brown meat in
oil. Poour off excess grease. Add tomato paste, broth,
salt, pepper,
garlic, chili pwder, cumin, serranos and water. Bring to boil,
then simmer
on low, covered, for 1 1/2 hrs. Dissolve cornstarch in tiny
amount
of cold water
and slowly pour into stew until proper thickness of gravy is
obtained.
Serve with rice
and tortillas!
