1 pound pork
roast cut into 1 inch cubes
1 Tbsp. olive
oil
1 med. onion
chopped
1 bell pepper,
chopped
2 cloves garlic,
minced
1/2 cup chili
powder
1/4 cup cayenne
powder
2 Tbsp. cumin
1 tsp. dried
oregano
1 can peeled
tomatoes
2 cups corn
kernels
1 can black
beans drained
1 (4 oz) can
green chilies
2 tsp. sugar
1 1/4
tsp. salt
1/4 cup chopped
fresh cilantro
In large pot,
over medium heat, cook pork in hot oil until well browned.
Stir in next
3 ingredients, cook 10 minutes until tender. Stir in chili
powder, cayenne,
cumin and oregano, cook 1 minute. Add tomatoes with their
liquid, and
1 1/2 cups water, bring to boil, reduce heat to low. Cover
and simmer 1
1/2 hours, stirring occasionally. Stir in corn, beans, chilies,
sugar and salt.
When finished and ready to serve, stir in cilantro, and
dish into bowls.
