Cucumber Sambal

          2 large cucumbers
          1 tsp apple cider vinegar
          1/2 tsp salt
          1 green onion, diced
          1 tsp chili peppers finely chopped
          3 Tbsp fresh lemon juice
          2 tsp soy sauce
          dash cayenne pepper

          Peel cucumbers, slice in half lengthwise, scoop out the seeds and grate
          cucumbers into a salad bowl.  Sprinkle cucumbers with vinegar, and salt then stir
          together all remaining  ingredients.  Cover and refrigerate.  Used as a side
          dish/salad.
