Easy Chicken Cacciatore for Two

                       2       tablespoons margarine
                       2       tablespoons olive oil
                       1/2     chicken, or selected packaged chicken parts
                       1       14 1/2 oz. can of tomatoes, cut up
                       1       garlic clove, minced
                       1/4     teaspoon basil
                       1/4     teaspoon oregano
                       1/4     cup dry white wine - may substitute chicken broth
                               salt -- to taste
                               black pepper -- to taste
                               opt.  sliced fresh or canned mushrooms

                            Use a heavy pot to saute the onions and garlic in the margarine and
                       olive oil. Add the cut-up chicken and brown on all sides.
                            Add remaining ingredients and simmer, covered, for 30 minutes or
                       more until juices run clear from chicken. Serve over buttered broad
                       noodles if desired.
