Here is a quick and easy dip that always seems to make a hit:

               Hot Artichoke Dip

               One 14 oz. can artichokes, packed in water.
               One 7 oz. can chopped green chilis.
               One cup grated fresh parmesan cheese.
               One cup mayonnaise.
               One-half to one cup Jack cheese (optional)
               Drain and chop artichokes.

               Mix cheese(s) with mayo.  Add artichokes and chilis.  (don't drain
               chilis).  Bake at 350 degrees for 30-45 minutes until golden on
               top.   Serve with dip-size Fritos or chips of your choice.
