8 eggs
3 Tbsp milk
salt and pepper
to taste
1 Tbsp butter
10 refrigerated
biscuits (not baked)
10 strips of
bacon cooked and crumbled
2 cups (8 oz)
shredded cheddar cheese
2 chopped and
seeded jalapeno peppers
In a bowl, beat
the eggs, add milk, salt, pepper and jalapenos. Melt
butter in a
skillet, add the egg mixture, cook and stir over med heat until the
eggs are set.
Remove from heat and set aside.
Roll each biscuit
into a 5 inch circle. Place on greased cookie sheets.
Spoon egg mixture
evenly over crusts. Sprinkle with bacon and cheese.
Bake at 350
degrees for 15 minutes or until the cheese is melted.
