Yield: 4 servings
•4 sheets (12x18-inches each) heavy duty aluminum foil
•1-1 1/4 lbs. boneless, skinless fresh chicken breasts
•1 cup spaghetti sauce
•2 medium zucchini*, sliced
•1 cup (4-oz.) shredded mozzarella cheese, divided
-Preheat oven to 450° or preheat grill to medium-high.
-Center one chicken breast half on each foil sheet.
-Spoon spaghetti sauce over chicken.
-Top with zucchini.
-Bring up sides of foil and double fold.
-Double fold ends to form a packet, leaving room for heat circulation
inside packet.
-Repeat to make 4 packets.
-Bake 18-22 minutes on a cookie sheet in oven OR grill 14-16 minutes on
medium-high in covered grill until chicken is tender.
-Open packets and immediately sprinkle each breast with 1/4 cup cheese.
*Substitute 2 cups of your favorite sliced vegetable for the zucchini,
if
desired.
