10 medium potatoes
6 boiled eggs
1 med onion, finely chopped
2 stalkes celery, finely chopped
1/2 cup fat free mayonnaise
1/4 cup mustard
1/4 cup vinegar
1 tsp salt
1 tsp pepper
2 tsp cayenne pepper
Paprika
Boil potaotes in skins until tender but firm. Drain and cool.
Peel
potaotes and cut into chunks. Seperate egg whites from yolks,
set yolks aside. Chop whites into potatoes, add onion.
In small bowl, mash yolks, and add remaining ingredients except
paprika. Pour over potatoes and mix all ingredients well. Garnish
with paprika.
