Szechuan Beef,Wok Fried Potaotoes,Sweet Sake Soy Sauce

             4      8oz           sirloin steak

                                  SAUCE
             6                    shallots -- sliced thin
             2      teaspoons     garlic -- chopped
             2      teaspoons     ginger -- chopped
             1      teaspoon      crushed red pepper
             2      teaspoons     cilantro -- chopped
             2      teaspoons     butter
            12      ounces        sweet sake miran wine
             3      ounces        soy sauce

                                 WOK FRIED POTATOES
             3                    potatoes -- cut in 1/4" strips
             2      quarts        vegetable oil -- for frying

                                 SAUCE FOR POTATOES
             1      cup           mayonnaise
             1                    pepper -- roasted
             1                    pinch of garlic
                                  salt and pepper -- to taste

          Saute shallots, garlic,ginger crushed red pepper and butter for 3
          minutes. Add sweet sake and soy sauce and reduce slightly add cilantro and
          remove from the flame.   In a heavy duty saute pan seared beef to disired
          temperature. slice thin  For potatoes preheat wok to 350 degrees fry potaotoes
          until crispy brown for sauce for potaoes , mix the ingredients in a blender until
          smooth Place sliced beef around the edge of a round plate. place potatoes in
          the center. ladle sweet sake soy sauce around the beef. Drizzle the sauce for
          the potatoes over the patatoes.
