3 c. Split Peas
(green) (dry)
7 c. Water
1 ea. Bay Leaf
2 tsp. Salt
1 c. Onions
(minced)
3 ea. Garlic
(cloves, minced)
2 Tbsp. Olive
Oil
1 c. Celery
(minced)
1 ea. Potatoes
(red) (small, thinly sliced)
2 c. Carrots
(sliced)
1/2 tsp. Thyme
1/4 tsp. Basil
Simmer split
peas, water, bay leaf, and salt covered for 3-4 hours in crock pot or
pot. Then
remove bay leaf. Saute onion, garlic, celery, potato, and carrot in oil.
Add water as
necessary to help steam cook it. Cook until tender. Add to pot.
Add seasonings
(you might needmore salt or other, taste and see).
Optional: just before serving stir in 1-2 Tbsp. of freshly chopped parsley.
