1 ea. Onions
(chopped)
1 c. Celery
(chopped)
1 ea. Bell Peppers
(diced)
1 ea. Zucchini
(diced)
1 ea. Tomatoes
(diced)
12 ea. Mushrooms
(sliced)
2 c. Kidney
Beans (cooked)
1 can Tomatoes
(28 oz., crushed)
4 c. Water
2 Tbsp. Parsley
(dried)
2 Tbsp. Basil
(dried)
1 Tbsp. Oregano
(dried)
1 tsp. Thyme
(dried)
1/2 tsp. Salt
4 oz. Tortellini
Combine oil,
onion, celery, bell pepper, zucchini, tomato, and mushrooms. Cook
over medium
heat for 7-10 minutes. Stir occasionally. Add rest of ingredients,
reduce heat,
cook 15 minutes, stir occasionally. Then add 4 oz. cheese tortellini
and cook 15-25
minutes longer.
Variation: May
substitute maccaroni for the tortellini if you don't want the
cheese.
