Tapioc Pudding

          1 tsp. Vanilla (extract)
          1 tsp. Coconut (extract)
          1/4 tsp. Salt
          1/3 c. Honey
          4 c. Milk (tofu or rice milk)
          1/2 c. Tapioca (minute, granual kind)

          Place all ingredients except for tapioca in a pot on  the stove. Bring to boil. Stir
          often so it does not  boil over. Add tapioca and continue stirring as  needed until
          tapioca is clear. Then place in  refrigerator to cool and let it thicken some more.
          Serve with peaches, berries, or other fruit.
